Pumpkin Spice Energy Bites

Fall in Florida is non existent. In fact the only way the typical Floridian knows its has arrived in the world is when, Starbucks says the PSL (Pumpkin Spice Latte) has arrived. Then in typical fashion they sit in an air conditioned building dreaming of warm orange and brown hues, waiting for the day they can pull out their cozy sweaters and tan boots. I kid... I kid....but wait do I?

No matter the weather anyone can enjoy a good healthy snack and I have one just for you.

These delicious little treats were the result of a Pinterest fail. You know! That time when you find the recipe so picturesque you can't help but bring in into being, and then utterly fail!

The original recipe was for some coconut flour pumpkin muffins. When they came out of the oven they were dense and moist.

Too moist and dense to really enjoy as a muffin. I didn't want to throw them out so I decided to make them into energy bites.

I will not admit defeat so easily, nor will I waste perfectly good ingredients!

This was done by making some homemade granola and mixing it into the bite mix.

The recipe below (at the bottom of the page) has been simplified because who wants to make bad muffins and then turn them into energy bites?

INGREDIENTS

This list may seem a little intimidating, but don't despair if you don't have some of these items.

The great thing about energy bites is that you can let your taste buds decide the ingredients.

All you really need is the pumpkin mix with some sort of granola or dry ingredients homemade or store bought will do :)

The recipe below is for the homemade version of things.

1/4 cup Roughly Chopped Nuts.

3 1/2 cup Oats

1/2 Craisins

1/4 cup Melted Coconut Oil

1/4 - 1/2 cup Honey

1 Can Pumpkin Spice

1 tsp Vanilla

1 tbsp Cinnamon

1 tbsp Pumpkin Spice **

2 Cups Almond Flour (binding agent)

1/4 cup Coconut Flour (binding agent)

1/4 cup Chia Seeds

1/4 cup Flax Seeds

1/4 cup Hemp Hearts

1 cup Coconut flakes (I used unsweetened)

1/2 cup Chocolate chips

Granola Preheat oven to 340 degrees fahrenheit. In a glass bowl add in all your ingredients 1/4 cup roughly chopped nuts. (I used cashews) they are naturally buttery and sweet) 3 1/2 cup oats 1/2 craisins  1/4 cup Melted coconut oil 1/4 - 1/2 cup Honey (depends on how sweet you want it) Mixed together and put on baking tray lined with parchment paper. Sprinkle with Cinnamon until evenly coated  Bake at 340 degrees for 12 min stirring at the 6 minute mark While your granola is cooking start your pumpkin spice mix

Granola

Preheat oven to 340 degrees F

In a glass bowl add in all your ingredients

1/4 cup roughly chopped Nuts. (I used cashews) they are naturally buttery and sweet)

3 1/2 cup Oats

1/2 Craisins

1/4 cup Melted Coconut Oil

1/4 - 1/2 cup Honey (depends on how sweet you want it)

Mixed together and place on a parchment lined cookie sheet

Pumpkin Spice

1 Can Pumpkin Spice

1 tsp Vanilla

1 tbsp Cinnamon

1 tbsp Pumpkin Spice ** (may want more dependent on taste preference)

2 Cups Almond Flour (binding agent)

1/4 cup Coconut Flour (binding agent)

Use a fork to incorporate the flour into the pumpkin mix.

**If you don't have pumpkin spice you can add these ingredients together to get a similar flavor

1 tbsp Cinnamon

1 tsp Cardamom

1 tsp Nutmeg

1 tsp Ginger

pinch of clove

After your granola has cooled add it into the pumpkin mix about 1/2 a cup at a time.

I used my hands to mix everything together.

Now is the time to choose your special ingredients.

I added the ingredients below

1/4 cup Chia Seeds (boosts energy

1/4 cup Flax Seeds

1/4 cup Hemp Hearts

1 cup Coconut Flakes (I used unsweetened)

1/2 cup Chocolate chips

After you have added all your ingredients take a tablespoon and scoop out some mix. Then take the mix and roll the mix into a ball.

Once your bites are rolled take the cup of coconut flakes you put aside and roll your energy bites in them

Store finished bites in an airtight container and refrigerate for at least an hour.
